The results of basic and clinical research (more than 100 articles in agreement) show the unexpected influence of the masticatory function on superior brain activities as memory and cognition. The lesson will highlight the state of art in the field with special attention to the reduction of the number of neurons and synapses together with the enhancement of the astroglia in the hippocampus both during development and ageing. The physiology and pathology of the masticatory function will be highlighted. The alterations of the chewing patterns and muscular activation during malocclusions and during ageing should be approached in the light of the recent results as well as the bolus consistency i.e. nutrition from weaning through elderly.
